INGREDIENTS:
2 pounds turtle meat
4 onions, chopped
6 ripe tomatoes, chopped
1 can (16 ounces) peeled tomatoes
2 cups cassava peeled and cut into 1 inch pieces
2 cups white potatoes or white sweet potatoes
4 sprigs chives, minced
2 garlic cloves, minced
1 cup red wine
1/2 hot pepper, seeded and chopped
1 1/2 cups water
1 1/2 teaspoon browning
Dash freshly ground pepper
Dash salt
Vegetable oil
4 medium limes, juiced

DIRECTIONS:
Wash turtle meat with lime juice and water.
Season with onion, tomato, chives, garlic and wine.
Marinate overnight in refrigerator.
In a large pot, add a little oil.
Remove chives, garlic and onions and fry them in a pot.
Add the turtle meat and fry for about 15 minutes.
Add browning and hot pepper.
Simmer for about 2 hours.
Add pepper and salt to taste.
Serve hot over white rice.
