So here we have it ladies and gentlemen! Because Conch is prepared in so many different ways in the Bahamas, we are giving you two different recipes to enjoy this delicious national dish!
FRIED CONCH
Ingredients
1 lb. conch
1 cup flour
2 eggs
Salt and pepper to taste
Vegetable oil for deep frying
Directions
Set deep fryer to 350 degrees.
Clean the conch using lime or lemon juice in salt water. Ensure all the colorful bits have been cut away, preserving as much white meat as possible.
Pound the conch meat with the jagged end of a meat mallet until the meat is nearly shredded.
Use the salt and pepper to season.
Mix the eggs i one bowl and in another bowl place the flour.
In the egg mixture, dip the conch pieces and let excess drip off. Then place in the flour, ensuring it is coated.
Rest the conch pieces in the deep fryer, 3 minutes each until golden brown.
CONCH SALAD
Ingredients:
8 oz. Cleaned conch, diced
10 tbsp. Fresh lime juice
5 tbsp. Fresh orange juice
½ c. Diced tomato
¼ c. Diced onion
1 Cucumber peeled, seeded, and diced
½ c. Bell peppers, diced
2 Jalapeño peppers, minced (add a third for extra spice)
Salt and Pepper, to taste
Directions:
Combine ingredients in a large bowl and mix thoroughly.
Cover and let marinate in the refrigerator for at least 15 minutes or up to 2 hours. (We find that the longer it marinates the more tender the conch and punchy the flavor).
Serve and enjoy!
