Keshi Yena (Stuffed Cheese) is the national dish Aruba. Keshi Yena is said to have originated from the slaves of the Dutch West Indies who stuffed discarded Edam and Gouda cheese rinds with table scraps to make a meal.
The Keshi Yena is a large ball of cheese stuffed with spiced beef that is served baked or steamed. Most natives of Aruba have substituted the spiced beef with chicken or Goat meat.
Some modern recipes use sliced cheese on the base and top of the chicken filling.
